Pumpkin – Pork medaillons

Ingredients:
250 g fillet of pork
400 g pumpkin meat
100 ml coconut milk
salt
pepper
250 ml vegetable stock
1 midsize onion

Preparation:
Cut the onion in fine dices and stew them in pan. Cut the pork fillet in medallions, flavour them with salt and pepper and roast them gently together with the onion.

Chicken Fricassee

Ingredients for 3 servings:

1-1,5 kg casserole fowlChicken Fricassee
greens: 1 carrot, celery root, leek
enough water
100 g raisins
3 Tbsp. flour
100 g fine sliced almonds
juice of 1 lemon
salt

Preparation:

1. Put the fowl in a pot together with the sliced greens fill it with water until the fowl is covered and boil it for 30 minutes.

Rhinonian Sauerbraten

Ingredients for 3 servings:

1 kg topside beef ( or horse meat)
1 tbsp. oil

marinade:
1/2 l water
1/4 l red wine vinegar
1 teasp. salt
3 midsize onions
1 carrot

5 cloves

10 juniper berries
10 black peppercorns
1/2 teasp. mustard seeds
2 bay leaves
1 knife point coriander and majoram
1 teasp. rosemary

gravy:
200 g raisins
50 g currants
2 midsize onions
1 tbsp. sugar beet molasses
100 ml cream

Preparation:
1. Boil all the marinade ingredients for 5 minutes, cool it down. Put the meat into a large bowl and baste it with the marinade.

Ingredients for 3 servings:

1 1/2 kg waxy potatoes
1 big onion
2 eggs
1 teasp. salt
generous pinch of nutmeg
optional flour
1 tbsp. oil per pan
applesauce optional

Preparation:

1. Grate the potatoes over a colander into verry fine stripes that the water can drain off.
