Between the several easter recipes that we have in Germany one popular easter delicacy is to prepare an easter bread. Easter bread in Germany is usually prepared out of a soft and puffy yeast dough. In case of we call it Osterlamm (easter lamb) the easter bread is to be shaped like a lamb. Easy to prepare, a delightful decoration for your easter table.

 

Instructions:
1. Fill the flour in your food processor.

1,4 kg leg of lamb
1 cinnamon stick
2 tbsp. lemon zest

a pinch of chili powder
1 Spanish onion
6 garlic cloves
1 l milk

Ingredients for the side dish orzo:
500 g orzo
1 garlic clove
200 g goat cheese
100 ml tomato purée

2 tbsp. baking powder
125 g custard powder vanilla
300 ml milk

There are several rhubarb recipes in Germany. We use to prepare rhubarb when it is fresh available on markets. The fresh sour rhubarb is an interesting product for several dessert recipes.

Easter bread or Yeast breadeaster bread or yeast bread – Osterkranz needs
for 5 to 6 servings the following ingredients:

500 g flour
42 g yeast
200 ml milk
75 g sugar
lemon zest of one midsize lemon
100 g margarine (optional butter)
1 teasp. salt
1 egg white
1 egg yolk
1 tblsp. milk
25 g coarse sugar
25 g chopped almonds

The Easterbread named Osterkranz is a braided variation of the german classic easter bread. Not only the appearence of this german easter recipe is different but also the ingredients (compare with e.g. Osterlamm). This Easter bread or yeast bread recipe is a classic bakery product that you can buy in every local german bakery over Easter. In our family we prepare it nearly every Easter and enjoy the fresh lemon note the sweet yeast bread has when it is served with fresh butter.


Preparation of easter bread or yeast bread – Osterkranz:

1. Pour flour and sugar in a big mixing bowl. Heat up the milk in a cup in the microwave until it is handwarm. Then dissolve the yeast in the milk.

Leg of lamb with orzo

Leg of lambIngredients for 3-4 servings leg of lamb roast with orzo:
1kg leg of lamb, deboned
1 carrot
2 midsize onions
1 sprig of rosemary
1 sprig of sage
1 sprig of thyme

2 cloves garlic
200 ml meat broth
1 tbsp. honey 

500 g orzo
75 g feta
125 g crushed tomatoes
100 ml cream
1/2 teasp. oregano

Preparation of roast leg of lamb with orzo:

 

1. Chopp the herbs and garlic and stuff  them into the deboned leg of
    a lamb. Optional tie the meat with butcher’s string into accurate form.
