Roast Goose with chestnuts, apricots, apple, dumplings and gravy

Roast Goose with dumplings, chestnuts, apricots, apples and gravy
for 2 servings:

1kg goose breast (e.g. frozen)
200g chestnuts, peeled
1-2 apples, midsize and sweet
100g apricots, dried
400ml broth

Roast Goose is a delicious way how to cook goose. Have you thought of goose as a turkey alternative ?

Especially in the colder days of the year hearty recipes are being cooked in traditional german households. Especially for christmas cooking goose has a long tradition in a lot of german familys. But even in autumn goose recipes are typically prepared like on St. Martin’s day e.g.
As we will show you in the following directions it is not necessary cooking a goose (whole) but even easier to try roasting goose breast. We use frosted goose breast that we started to defrost the day before.

Now how to prepare this roast goose?

Instructions:

1. Wash the goose breast with cold water and pat it dry with some paper towels. Fill chestnuts, dried apricots and peeled apple slices in a casserole dish of about 30cm length, 15cm width and 4cm height. Place the goose breast on top.

German Christmas Goose

Makes 3 to 4 servings out of our german christmas goose.

Ingredients for 3-4 servings:
1 goose (4,5kg)German Christmas Goose
2 apples
2 pears
100 g dried plums
200 g
dried apricots
100ml apple schnaps or liquor
100 ml apple juice
salt and pepper
2 tbsp. lingonberry jelly
1 tbsp. corn starch
1 tbsp. apple jelly
enough water

1. Wash the prepared goose (without interior organs!) with water and dry it afterwards carefully.

Apple bread

Ingredients:

750 g apples
250 g sugar
200 g almonds
200 g raisins
1 tbsp. cocoa

1 teasp. cinnamon
500 g flour
1 teasp. baking powder


Preparation:

1. Grate the cleaned apples in a bowl, add the sugar and place the bowl over night in a cold place.

Pumpkin Apple Jam

Ingredients:

500 g giant pumpkin
500 g apples
50 ml apple juice
juice of one lemon
0,5 teasp. cinnamon
500 g  jam sugar 2:1
100 ml water

Preparation:
1. Peel and seed the pumpkin then cut it into dices. Stew the pumpkin in a pot with the water for about 10 minutes and puree it afterwards.

Fast Apple Pie

Ingredients for 12 servings of fast apple pie:

180 g margarine
150 g sugar
4 tbsp. vanilla sugar
4 eggs
300 g flour
2 teasp. baking powder

250ml milk
2 teasp. oil
5 midsize apples


Preparation:

1. Stir margarine, vanilla sugar and sugar until the mixture is creamy. Fold in the eggs bit by bit.
