Cheesecake recipe retro-style

    Cheesecake recipe for 4 to 6 servings

    For the Cheesecake dough:

    3 eggs
    3 tbsp. water
    90g sugar

    100g flour
    1 teasp. baking powder
    60g starch flour

    Cheesecake recipe

    For the cheesecake stuffing:
    juice of 1 lemon
    pulp of a vanilla bean
    4 tbsp. powdered sugar
    450g farmer cheese
    15g gelatin
    230g whipped cream

    Preparation of the cheesecake dough:

    1. Mix eggs with water and sugar and beat it for 5-7 minutes until it is foamy.

    2. Mingle flour, starch flour, baking powder and fold it careful in the egg foam. Fill the dough into baking paper covered springform pan.

    3. Preheat the fan-oven on 180°C.

    4. Place the sprinform on the middle position of the oven for about 15-20 minutes. Anneal the sponge cake and cut it horizontal into half.


    Preparation of the cheesecake stuffing:

    5. Stir lemon juice, pulp of the vanilla bean and 3 1/2 tbsp. powdered sugar.

    6. Add the farmer cheese and the watered gelantine.

    7. Whisk stiff the cream and fold it in the mixture.

    8. Coat one half of the sponge cake with the stuffing and top it with the other half.

    9. Now put the cheesecake for 2 hours in the fridge.

    10. Enjoy your german cheesecake!
