Raspberry Muffins

What is your favourite ingredient for baking muffins?

Do you prefer fruits, vegetables or something else?

Makes 8 to 12 servings.

Today we had about 15° to 17°C (60° F) and an overcast sky. The ideal conditions to bake something for the teatime.

In our household we have the habit to have a teatime (with cocoa, tea or coffee and any cake / cookies) at about 4 a.m. when it is possible after we get home.

We normally stand up early in the morning. To have some caffeine / theobromine in the afternoon gives us some energy for the rest of the day.

Although the strawberry season started, we decided to use some frozen raspberries that were left over from garnishing ice cream.

Ingredients for raspberry muffins:
50g butter

1 egg
100 g flour
35 g sugar
2 teasp. vanilla sugar
1/2 teasp. baking powder

250 g raspberries, frozen

Fact of the Week about Germany:

The maypole tradition in North-Rhine-Westphalia, Germany:

A popular tradition in our part of Germany, the Rhineland, goes back to 13th century (affirm some sources). In the night between of 30th of April and 1th of May young men place a fresh cut down birch tree in front of the house of their beloved.

On the 1th of June, one month later, the men clean up the tree and their beloved rewards their effort with an invitation to a dinner or a crate of beer.

The maypole tradition is celebrated in different variations throughout Germany.

Preparation of this raspberry muffin recipe:

  1. Pour the flour in a bowl, add all the other ingredients and mix them to a fine dough. Put the dough in the fridge.

Layered Salad

Makes 8 to 12 servings of layered salad.

Ingredients for layered salad:

 

1 iceberg lettuce
100 g cooked ham
255 g kidney beans, canned
175 g tangerines, canned

150-200 g gouda cheese
500 ml salad cream, low fat 4,8%
340 g pineapple, canned
285 g canned corn
50 g nachos
200 g leek

Yesterday we had about 20° to 25°C
(77° F) and a clear blue sky.
The ideal conditions to have a BBQ with friends.
In a lot of german households there ecxist special reicpes that are preferentially only prepared for BBQs or birthday parties.

White Asparagus soup

Makes 5 to 6 servings of yummy white asparagus soup.

Ingredients for white asparagus soup:
2,5 l water from boiling asparagus
5 tbsp. butter
5 tbsp. flour

250 ml milk
1 white bun or bread
a half spring onion

You have boiled asparagus and don’t know what to do with the boiling water? Why not prepare a white asparagus soup?

We had our first white asparagus of the season on thursday.
How to cook asparagus:
In our household about 1 kg asparagus is boiled in 2,5 liter water that is druged with some sugar, butter and salt. This time we wanted to keep the aromatic boiling water as an ingredient and decided to make asparagus soup with it.
This broth is the ideal base for a creamy white asparagus soup e.g. with bread crumbs.

This year the asparagus season started in North Rhine-Westphalia on April 22th, 2010.
So we are quite late with our first asparagus but anyway not too late to get verry good asparagus for about 3 € per kilogramm on the daily
market in Bonn.

Rice pudding recipe with cinnamon and peaches

125 g dry rice
500 ml milk

25 g sugar
10 g cinnamon
2 tbsp.

6 half peaches, canned

Do you favor to have a sweet or a hearty breakfast?
We were at odds with each other about this question but the rice pudding recipe with cinnamon and sugar, with it’s sweet and fruity flavour that we had today was delicious..

Foreword:
As we stood up today (sunday) we didn’t wanted to go to the bakery to get
some rolls. This time we decided to prepare a light energizer for an active day.
So we took a look into our storage cupboard and prepared rice pudding with
canned peaches.
