Potatoe casserole from the harz mountains

Ingredients for 3-4 servings potatoe casserole:Potatoe casserole
500 g beef ground chuck
1 teasp. salt
1/2 teasp. ground pepper
1 tbsp. mustard
2 midsize onions

2 garlic cloves
2 teasp. vegetable oil
1 kg waxy potatoes


1 l meat broth
200 g sour cream


 

 

 

Preparation of the potatoe casserole:

1. Cut the onions and the garlic cloves into fine dices. Fry the ground beef in an oiled pan. Then add salt, pepper, mustard, onions then garlic one after another and fry everything until the onions change their colour.

pudding for 3-4 servings:

1/2 vanilla pod
45 g cornstarch
2 eggs
pinch of salt
500ml cold milk
70 g sugar
1-2 tbsp. butter

Ingredients for 3-4 servings of traditional german Quarkkeulchen:

500 g boiled potatoes
375g Quark
a handful of raisins
pinch of salt
150 g flour
65 g sugar
1 egg
3 tbsp. oil for broiling

Quarkkeulchen is a dessert recipe that we have from our ancestors in Saxonia a federal state in the eastern part of Germany. Delicious when served cold or even still warm fresh out of the pan with some apple sauce. When you have never tasted them you have left out something extraordinary delicious. A first description of Quarkkeulchen might be that they are something between a pancake and a dumpling. Fried but fluffy, sweet and hearty.

How to prepare Quarkkeulchen:

1. Mash the cold, boiled potaoes.

Bread dumplings aka Serviettenknoedel

Ingredients /equipment for 3-4 servings bread dumplings:

250 g white buns or bread
4 tbsp. butter
Bread dumplings
1 midsize fine diced onion
3 eggs
250 ml milk
pinch of salt
pinch of ground nutmeg
100 g fresh parsley
1 linen

Preparation of bread dumplings:

1. Fry the fine diced onion in a pan. Cut the bread or buns in 1cm³ dices and put them in a large bowl.
